Always look for stems that are firm, and tips that are deep green or purple in color. White asparagus is grown underground to inhibit its development of chlorophyll content, and has a more delicate flavor and texture. So many ways to cook it, but simple is just fine, with a little butter and olive oil, and parmesan cheese topping.
